Typical pork breed from Siena, which has been known since the Roman period and characterized by a stripe of light bristles around the chest, withers, shoulders and lower limbs, the remaining coat is slate black.
Our pork-faming is part of a consortium for the Protection of the Cinto Toscano Swine, whose pigs live wild eating acorns, roots and tubers integrated with the cereals produced by our farmhouse. Slaughtering takes place when they are 18-20 months old.
The production of salami and cold pork meat is characterized by the meat consistency, which firm and compact and by the sapidity of its fat.
